DEFINITION

Pectinase is a class of enzymes which can break down pectin. Pectinase mainly includes protopectinase, pectin methylesterase(PME) and polygalacturonase(PG) which can lipolyse£¬hydrolyze and degrade pectin respectively. Through breaking down the pectin, galacturonic acid, oligo-guluronic acid, unsaturated galacturonic acid, and oligo-galacturonic acid are acquired. Finally, the cell wall is destroyed and the nutrients are released.

FUNCTION
