DEFINITION
Diastase is also called ¦Á-1,4-Glucosidases. It can take effect on the non-reducible ends of starch molecule at the position of ¦Á-1,4-indican bond to generate glucose. The end products of amylopectin reaction are glucose and oligosaccharide with ¦Á-1,6-indican bond. Most of the end products of amylase reaction are glucose.
